Roast New Potatoes With Red Onion , Thyme And Chives

Fed up of the obvious accompaniment to a burger which is chips , I decided enough was enough. When the chips are down then new potatoes must step up to the plate !


Ingredients 

New Potatoes 500 g or enough for the number of people
One red onion Sliced
Chopped chives
Sprigs of time
Glug of olive oil
Salt and pepper



Method 

Preheat the oven to around 190c

Wash dry and quarter the new potatoes 

Place in a large oven proof dish 

Then add the chopped chives and red onion

Add seasonings

Toss everything in a good glut of olive oil

Cook for around 1 hour in which during toss everything at regular intervals 

Serve and enjoy 

Who needs chips with burgers !!

  3. This is one for me, being a veggie I like sprucing my spuds up and the crispier the better. Sounds good with the red onion and thyme for an extra kick. Will try these.

  6. We always have potatoes with rosemary. it is why we grow so much! I have boys that love onions too!
