- Ingrediants
- 4 boneless chicken breasts .
- 1 1/2 cups crispy rice cereal, crushed (You can use the food processor for this, or just out it in a bag and bash the hell out of it)
- 2 tablespoons of flour
- 1/2 teaspoon of salt
- 1/4 teaspoon poultry seasoning.
- 1/4 cup butter or 1/4 cup low fat margarine, melted
Method:

- 2Place the melted butter in another bowl.
- 3Dip the breasts into melted butter then coat with the cereal mixture.
- 4
- 5Drizzle remaining melted on top of chicken and coat with remaining mixture if you like extra breading.
- 6Bake, uncovered at 400°F for 30 minutes or a bit longer for outside crispiness.
Oh yum! I've been using a packet crispy crumb coating, but it comes out a bit too salty. This way I can control the amount I use.

ReplyDeleteThese look really yummy! My little man loves chicken nuggets but I never know what the "chicken" really is. I do love making my own recipe for the coating but sometimes it's a bit too spicy for him so will try yours out!
