Eggless Apple Crumble Cake

Startled look.

I have a cooking teen.

I don't know what happened or how.

May be it was those sessions with those cake kits , you know the ones with a slightly disturbing Thomas The Tank Engine leering at you.

We've had Swiss roll, seasame seed and cheese bread and this week a sausage and tomato casserole.

I've got to up my game haven't I and I have  take that teen so I present to you.

Apple Crumble Cake

Its egg less mainly as I didn't have any eggs and I have a school holiday to pay for.

Its one of those use what you have to hand days and you know what those are the best days of our lives you have to agree don't you.

Ingredients

2 cups of raising flour

2 teaspoons of baking powder

1 teaspoon of cinnamon

100g of butter

1 cup of Light Brown Whitworths Sugar

I wheat type biscuit

Two table spoons of  milk or water

2 cooking Apples


Method

Preheat the oven to around 180c

Grease a spring cake tin

Put two cups of self raising flour into a mixing bowl

Mix with 200g of butter or low fat spread if you prefer

Peel and slice the apple.

Crumble up a wheat breakfast biscuit mix it with a little light brown sugar and sprinkle onto the base of the cake tin.

Place the cake tin in the oven for 10 minutes.



Then spoon in the cake mixture , add another layer of sliced apple and return to the oven for about an hour and 10 minutes this can vary depending on your type of oven .

Serve with custard , cream or ice cream or just eat on its own.

  2. eggs are the easiest ingredient going to remove from a cake without them being missed, so many replacers for them if you wish to replace.
    Well done teen on the cooking.
    Can I ask what happens to the wheat biscuit and sugar mix,? and does than then end up on top when serving?

    1. It added a crumble type topping , I suppose you could whizz it up in a blender and make it finer.

    2. made an apple and blackberry layer sponge with the crispy topping on, it is a very yummy topping, will blog it later.
