Summer is just blowing over and we are gently tumbling into Autumn and whilst we are lamenting the last bastions of summer , it is still absolutely ok to eat outside ! I hate food waste and after yesterday's dinner I had some left over Maris Piper potatoes which I put in the fridge.

Ingredients
Left over cooke Maris piper potatoes.
Can of tuna ( as ethical as you can buy) drained.
Tin of mixed salad beans.
Method
Tip the potatoes into a bowl and break with a fork.
Tip in the can of tuna which you would have already drained.
Add the can of drained and rinsed salad beans, which were barlotti , green beans etc , also sweetcorn.
Then mix again.
Chill in fridge.
Then serve with a pot of mayonnaise.

A whole pot of mayonnaise - you have no idea how big I buy those things!

ReplyDeleteWe all love tuna and I always have some tins in the cupboard for making different things. My nan never liked tuna and considered it cat food!
