Gin And Marmalade Cake

This is not a cake that the children can eat , we will leave the little angels to to their fairy cakes which are lovingly iced.





Ingredients


110g/4oz unsalted butter, softened
110g/4oz caster Sugar
2 large eggs
1 tsp baking powder
175g/6oz plain flour
30ml of a good quality gin

4 tbsp of marmalade ( one that doesn't set your teeth or edge.Adjust quantities to suit.


Method 


Preheat the oven to 160c or gas mark 4 . You can either grease and line a 2lb cake tin with baking parchment or as I did use cake release from Lakeland.

First mix the sugar and butter together till fluffy .


Add the plain flour , gin and marmalade  and baking powder, 

Next mix in the eggs.

Pour the mixture into your prepared loaf tin .



The bake in the oven for around 35 -40 minutes adjust your cooking time if you have a fan assisted oven.


Turn out the loaf , leave to cool.

Then decorate as you wish .

  2. Sounds delicious. I'm a fan of loaf cakes - because they never go wrong compared with round cakes which I often find end up too dry in my fan assisted oven.
